After reviewing this on my e-reader, I will be purchasing it. The photos are delicious looking! I have been working on fixing my pie crust and found the directions in the book easy and clear-cut. The images were simple but not too simple looking. Worth checking out! SO many yummy recipes! Excited to not only try the pies but also mini hand pies (something my kids are interested in!).

As someone who has been terrified about making pies from scratch, I really enjoyed reading this book and felt very inspired to try to master this skill. I enjoyed the photos and step by step instructions given with the recipes and the creative ideas.

A comprehensive, thoroughly tested guide to making (sweet) pies, in the vein of Cooks Illustrated. Author Ken Haedrich has written a book to demystify all aspects of pie-making for both the novice and experienced pie-maker, identifying and troubleshooting all likely obstacles bakers are likely to face. He also takes care to explain why seemingly persnickety steps are necessary. This collection includes recipes for classics like lemon chiffon pie and many which will be new to readers alike. The result is a mouthwatering and reassuring pie-making bible, and this reader at least would love to see a savory pie version.

My primary quibble with this beautiful and useful volume is that many of the few photographs are of the artistic mise en place variety rather than of finished pies. Many people choose which recipes to make based on how the final product looks in a cookbook photograph, and also use these photos to determine whether their final product looks "right." More photographs would have been very welcome. Barring that, exchanging the lovely but useless mise en place photos for ones of baked (and perhaps partially sliced/eaten) pies would have been preferable.

It's all about pie! Everything you want to know about pie and pastry making is inside this wonderful book. This was a great cookbook and Ken Haedrich did a great job explaining and making everything easy to follow, as well as enjoyable to read. I would recommend this book for all bakers, new and not so new, to have in their collection.

One of the best pie cookbooks I've ever come across, and a constant reference in my kitchen. The techniques are excellently written and presented, and the recipes themselves are fantastic.

A rich and accessible tome on pie baking. Haedrich is a patient, warm, and thorough instructor. Thanks to him, I finally figured out how to properly roll out pie dough!

Gorgeous book with recipes for every pie lover! Storey cookbooks always have the perfect ratio of science, instruction, and anecdote.

Pie Academy is one of the best guides to baking the best pies! I’m a baking novice, so I appreciated every bit of advice in this guidebook.

Pies are my white whale, I am ever trying to learn and improve but just keep missing the mark. With 'Pie Academy' by Ken Haedrich I now have hope that the perfect pie will be in my not too distant future! The recipes included within are thorough without being overwhelming and the photos are wonderful inspiration. Beyond the multitude of delicious looking fillings Haedrich takes the time in the first section of the book to demonstrate the process of creating the perfect pie dough, a process I for one always seem to struggle with. The combination of clear photos and detailed instructions about the process of making pie dough demystifies the entire process for a fledgling baker like myself. Make sure to pick this book up if you are looking for a new flavor or wanting to pick up a new skill. Happy baking!

A wonderful and informative cookbook that will have the reader excited to try a few new pies. Whether a beginner or an expert, there are plenty of recipes to try without feeling overwhelmed. A great addition to any library.

I just love pies!
But I was never that good at making them. Until I found this book!
The recipes are very easy to follow. The pies are sooo delicious. If I could I would eat them all day, every day.

Long awaited this book is a delight. I have made the base dough and I will never go back to any other. The details are user friendly. The pictures are wonderful. It was a dream to read and salivate.

Really fun to look at all the recopies. I really like baking, and I want to start baking pies. So this is essentially perfect for that. I am going to start baking some more pies now because of this.

I really enjoy the variety of pies that the author compilled in this book, I have a list of the ones I want to try to make myself, so I'm looking forward to that! :)

This is an outstanding cookbook. It contains recipes for familiar pies, and recipes I would have not thought of otherwise. There are beginner and advanced recipes, and the crust recipes were great.
This has something for everyone, 5 stars.
