As a big fan of Freya I was excited to receive this book. the recipes look delicious,are set out well and easy to follow.

Simply Vegan Baking by Freya Cox is a must-have cookbook for anyone looking to incorporate plant-based baking into their repertoire. As the first vegan contestant on The Great British Bake Off, Cox has a wealth of knowledge and experience to share, and this book does not disappoint.
With 70 recipes ranging from simple cakes to showstopping desserts, there is something for every occasion. The recipes are reassuringly familiar and the best part is that they are effortlessly vegan. I was amazed at how delicious and easy these recipes were to make, and the fact that all the ingredients are readily available at my local supermarket made it even better.
Some of my favorites included the Salted Caramel Cupcakes, Triple Chocolate Cookies, and Black Forest Gateau. But honestly, every recipe I tried was a hit. I highly recommend this cookbook to anyone looking to explore the world of vegan baking.
It is tough to review a cookbook if you have not had the opportunity to try any of the recipes. I could have made the time, but it has yet to work out that way. I browse through numerous cookbooks in any given year, and sometimes I find one of two things happen: One is that there is similar content, while another is very difficult recipes.
This book has a little bit of the first but not much of the second. As the author promises on her cover page and the preface, the bulk of the recipes are straightforward and does contain the standard recipes for some of the base sauces/creams.
I liked the presentation and the overall colour scheme of the book. This is the kind of pretty as well as useful book to have on one's shelf to browse leisurely before picking one particular page to try out.
This kind of book helps move the identity of vegan/veg baking from the caricatures they sometimes become in books or tv. I would like to keep this book, but unfortunately, my review copy was a timed electronic one.

As a new(ish) vegan, one of the things I was most concerned about was could I still make decent cakes and bakes? After reading Freya Cox's excellent book the answer is most definitely YES.
Simply Vegan Baking is all about making vegan baking accessible to people who still want to enjoy traditional cakes and baking but without the eggs, butter and milk. There are SO many enticing recipes in this book, I don't know where to start! I also really appreciated that there's nothing too specialist about the ingredients. All the recipes contain ingredients you can pick up in your local supermarket, you won't need to make a special trip to Holland & Barrett! ;)

This is a really great book for those who want to dip their toes into vegan baking. It is full of easy to follow recipes with simple ingredients. There are plenty of delicious looking cakes and bakes that it’s hard to choose what to bake first!
There’s also a number of gluten free recipes included for those who also need to bake gluten free and aren’t too confident adapting gluten recipes.
I’d recommend this to anyone who is vegan, needs to avoid eggs or dairy - or simply anyone who wants a challenge in their baking life with delicious results.
I am not a vegan but was interested to read this book as my daughter has taken me to a vegan cake shop. I was very impressed with the cakes and couldn’t believe they were vegan. Having watched Freya Cox on Bake Off I hoped this book would be a good introduction to the art of baking without using eggs and dairy products. It certainly is and I’ve enjoyed cooking a few recipes from it and trying them out on friends and family with great success.
I was so excited to see this book from Freya after following her journey on the Great British Bake Off. This is a gorgeous recipe book with beautiful pictures accompanying the recipes. The instructions are really simple to follow. I couldn’t believe how easy it is to make amazing bakes and also keep it vegan.
This has everything to suit all sort of sweet tooth and all the extras to go with your favourite bakes. A fab baking book to add to your collection!

Freya was one of my favourites on Great British Bake off so reading this and trying some of the recipes was a must.
Vegan baking is something I've always wanted to try to see how it compares and boy does it compare!! The coffee kisses were beautiful and are now in ny top ten, easy to bake but beautifully flavoured!!!
Cannot wait to delve into other recipes like the pumpkin spiced cupcakes when October comes around!!!

This cookbook has A LOT to offer. A lot of vegan cakes, pies, bread, cupcakes and more.
The explanations are well written and I have already tested 3 recipes - 3 resounding successes! In fact, some of the best cakes I've baked! The Black Forest Gateau, the Chocolate Hazelnut Babka, and the Lemon Meringue Pie (that I adapted as a lemon-passion fruit meringue pie). They were beautiful and delicious. And there are so many recipes! With a lot of tips to adapt depending on your kitchen appliances.
I recommend this book to anyone, these recipes are incredible and delicious (and not "for a vegan cake", they're just delicious full stop!!) and it was such a joy to finally indulge in a Black Forest Gateau, make meringue from aquafaba or to plait bread into a babka :)

First up, my biases - I have none as I never watched any of these "reality", cookery, television programmes and would not if you paid me! So, I truly had and still have no idea who Freya Cox is, other than she has written Simply Vegan Baking.
What I like to bake is bread and, whilst I only bake the very occasional sweet thing, Simply Vegan Baking intrigued me. For me, it flies in the face of everything that I have picked up over my life. That said, I am very pleased that I gave into temptation and have now discovered how vegan cake bakers manage to solve the challenges that we more traditional bakers have never faced since the end of rationing.
The book was a total revelation and has tempts me to consider using some of Freya's techniques when I next bake something other than bread.
What I am really trying to say is that this book will open the mind of many bakers to the reality that traditional methods can be improved. It has certainly opened mine to that truth.
As a massive bake off fan i was excited to get a copy of this from netgalley. My niece is dairy intolerant so I'm always looking for a good recipe book, this was a fabulous collection. Really wide range of delicious looking recipes I can't wait to try. Freya had some good tips and I'm looking forward to trying some of these out.
Bakewell Tart, Fondant Fancies, Tiramisu, and more - all suitable for sweet-toothed vegans! I liked the premise of this book, which has recipes for plant-based versions of favourite bakes and desserts with no weird ingredients and no pretence of being healthy. There is a definite Yorkshire flavour to the content. Freya Cox was on The Great British Bake-Off, a show I have never watched, but I really got a sense of her personality in this book. There are a lot of lovely photographs too.
The oven temperatures in the recipes don't include gas marks but it's easy to convert them. The ingredients were all supposed to be available from one's local supermarket, which I decided was true for most of them but some may only be found at the largest supermarkets or possibly health food shops. I suppose if you get your groceries online there might be more choice.
I tried three recipes from the book, but not any of the cakes as I don't have the correct sized tins. Although there are a few gluten-free recipes included, I tried ones that weren't, using gluten-free flour. It wouldn't work for everything but there is no harm in trying. There is a reliance on 'vegan butter', which I'd never used before. It worked well, however I'm not used to eating things with a buttery flavour any more so I don't think I'd want to make things where that flavour dominates.
Jam Tarts: These were cheap and cheerful to make. The recipe was simple to follow and surprisingly easy, as I'd never made pastry before. I didn't have the specified sizes of tray or cutter so I used smaller ones. I was worried they would get stuck to the tin but they came out easily. I had a bit of pastry left over for making lattices but they were too fiddly to do. I would make these again, with different jam flavours. It's a long time since I even ate jam tarts, as I've never seen vegan ones in the shops.
Millionaires' Shortbread: I left the peanuts and peanut butter out of the recipe. The recipe worked OK but the base was too crumbly (either because of the gluten-free flour or forgetting to chill the tin in the fridge before baking). I'm not sure I'd make these again, as they generated so much washing-up, the ingredients were a bit pricey and they weren't as nice as some other things I bake. If I did make them again, I'd reduce the quantity of the caramel and of the white chocolate, as there was too much.
Triple Chocolate Cookies: These were easy to make, except that the dough was quite sticky so perhaps I would chill it in the fridge before baking next time. I couldn't find vegan chocolate chunks at all, so I used a bag of dark chocolate chips and chopped up a small bar of dairy-free white chocolate. I would make the cookies smaller next time and bake them in more than the specified two batches, so they don't end up too big and running into each other. They were rich-tasting and soft like the ones you get from a bakery.
In summary, a wonderful recipe book, ideal for vegans who don't want to miss out on delicious bakes, or those who wish to bake for vegan friends and family.

Simple, basic recipes, easy to follow so you can’t mess it up. I think this would provide a good starting point for a beginner vegan baker.
What I especially liked about this book is that you are not spending time hunting down ingredients that you would not normally have at home. If you have soya milk ✓ and Apple cider vinegar (or lemon juice) ✓ and your usual vegan spread ✓ you are good to go. My only concerns are for my waistline !
Freya has done a wonderful job of making vegan baking accessible to people who want to enjoy traditional bakes without the eggs, butter and milk normally used. She also wanted to make sure the ingredients were easily available, and did not need special trips to health food stores.
The book contains a wide variety of things to bake, all of which she made herself numerous times to ensure they would work. This seems to me to be the key to a really good book. Recipes that can be replicated easily and work properly.
These may have been inspired by her granny’s baking but they should inspire people from all ages to bake vegan.
I quite liked this book, even as a non-vegan myself. The recipes were easy to follow with pictures for nearly every one so you could see what you were making. However, most of the recipes were classic bakes just made vegan so if you're a beginner baker this would be great but a bit basic for others.
The first, and most eye-catching, thing I noticed about Simply Vegan Baking was the lovely, bright photography - the cheerful colour scheme really pulls the cookbook together nicely, whilst showcasing the bakes at their best.
I loved the little touches added by Cox throughout - often these weren't vegan adaptations at all, but little flavour additions which had never occurred to me before, and which sounded marvellous. Of these, my particular favourites were the peanut butter millionaire's shortbread, and the chocolate orange cheesecake (bourbons for the biscuit base! Of course!)
If there is one area which is lacking, I would have preferred some more in-depth advice about vegan baking - I really appreciated sections such as the snippet at the start of the cakes chapter explaining ingredients choices (it was both interesting, and stopped me from attempting to use oat milk instead of soy). The Extras section was also very helpful - especially the recipe for a vegan creme pat - and I would have liked more of this: more in-process or step-by-step photographs, as a lot of the techniques and ingredients are new to those who haven't tried vegan baking before.
That said, the recipes themselves are concise and simple - the steps are plainly written and easy to follow. I've certainly been left with lots of ideas, and baking inspiration!

This book is a sweet-toothed vegan's delight, it's brimming with well thought out and clearly well practiced recipes. A clear understanding of what flavours goes together is evident, as is Cox's sheer enthusiasm and love of baking.
I have made the coffee cake with Russian buttercream - which was amazing - in taste and simplicity, with clear and concise instructions. This book will be used often in our house; and I will be gifting copies to friends and family. I absolutely recommend this baking book to novices and experienced bakers alike, there is something to suit all capabilities and tastes, without having to spend a fortune on ingredients.
I have learnt so much from this book about vegan baking which I never thought would be possible. They actually work and taste and look good. My favourite are the tray bakes.

It’s amazing how good these recipes look and I can only imagine they taste better. I was impressed by some of the sets in these recipes and will be sure to try lots of tasty baking. I’m planning on baking the chocolate brownie and the triple chocolate cookies soon!
I tried veganuary this year and loved it. I have stuck at 100% vegan since however I have stopped eating dairy so this book is amazing for me to get back into baking.
I would recommend this recipe book to everyone. I really liked watching Freya on bake-off and she is one of the reasons I tried going vegan. I may have failed at fully going vegan at the time books like this will make it easier for everyone to go plant based in the future.
