This is a beautiful book!

I'm not vegan but am interested in ways to reduce what animal products I eat. This book uses vegan-versions of cheese and milk which isn't really my thing, but there's a nice variety of recipes for those who are vegan. This book includes breakfasts, lunches, dinners, and desserts though there's a lot of smoothies and smoothie-adjacent foods included.

The photos are great and there's some good recipes making this a helpful book.

I loved this recipe book. I am vegetarian but will read all types of recipes and adjust them to my liking. I found that this books isn’t crazy with 10+ hard to find ingredients. It uses basic meals and adds a few more things to keep it interesting. Eat the Rainbow was a something my nutritionist always said to me. To always include as many colors as posible to gather nutrients from different sources. This book does exactly that and it has a great mix of complexity and variety.
The section for kids and deserts were definitely my favorites. The whole book highlights how easy it is to make vegan substitutions while still being easy, nutritious and delicious. Some of the recipes are similar to what I already eat but will be useful as it suggests some added ingredients. I’m so excited to try them out.

This book is visually stunning - the sort of cookery book that demands to be displayed (prominently, on a coffee table). With a title of 'Eat the rainbow', a celebration of food in all its tempting majestic colour is suggested - and this is 100% delivered!

The book is vegan, but unlike many. books in this genre, I didn't find the ingredients difficult to source. The recipes felt original to me, and the colours really did pop.

After an introduction and equipment section, the recipes are classified in the sections according to whether they are breakfast, brunch, mains, salads/sides, desserts, cakes/bakes and for kids.

I feel utterly spoilt for choice with regard to what to try first - it really looks that good!

I totally eat with my eyes and this book completely delivered in that department! The recipes were simple enough that someone like me could follow and all the food looked delicious. Highly recommend for anyone who wants more home made vegan eats.

I was first drawn to this book by the beautiful cover. The pages of this vegan cookbook are beautiful. So many tasty sounding recipes. I look forward to trying the rainbow chili stuffed sweet potatoes tomorrow! This cookbook is a great way to add more veggies to your daily menu. There are so many recipes to choose from. I think both vegans and non-vegans will find something to enjoy!
