Super Easy Tortilla and Taco Cookbook is a treasure trove of Mexican and Southwest cooking. I love that there are detailed instructions on making tortillas, equipment recommendations, etc for beginners. The author gets into different ways to add spices and other flavoring to different tortillas to change up the multitude of recipes already here.

There are recipes for fillings and sauces, quesadillas, tacos, nachos, burritos, enchiladas, fajitas, and salads. Everything from breakfast to cocktails to desserts. My favorite are the desserts of course, but I love the chalupas and quesadillas the best (of the non-dessert stuff).

I wish there were more pictures, but this is an excellent cookbook for anyone looking for a comprehensive Mexican tome! 😂
