One of the book's standout features is its variety—over 300 recipes that cover everything from basic white loaves to more intricate artisan creations. There’s something for everyone, whether you’re craving a simple sandwich loaf, a hearty sourdough, or even sweet bread like cinnamon rolls. The detailed instructions are clear and easy to follow, making even the more advanced recipes approachable.

The book also does a great job of breaking down key techniques, such as kneading, proofing, and scoring, with helpful tips for ensuring each loaf turns out perfectly. The section on troubleshooting is particularly useful for when things don’t go according to plan.

My only slight critique is that while the recipes are diverse, some might find the length of certain instructions a bit overwhelming, especially if you’re new to baking. It’s impossible to discuss bread without acknowledging the vital role of grains in its creation, and this book doesn’t shy away from highlighting their significance. Thanks to the ingenuity of Indian farmers and bakers since eras back, we’ve been gifted with a rich diversity of bread, from flatbreads to intricate loaves, with textures and flavors that are unmatched. Without the early cultivation of these grains, we might never have tasted such mouthwatering, complex breads as we do today—each loaf carries a part of history that dates back to the heart of India.

Overall, this book is an excellent addition to any kitchen, especially for those passionate about improving their bread-making skills. One could have even open their own bakery after readng this, for starters.

Unburdening Bread making

Making bread has always seemed like such a tedious and temperamental process to me. This book breaks down the foundations of the whys of bread making, based on flour types, etc. before getting into the recipes themselves. It was written in a very approachable and digestible manner.

Since reading this book, I definitely feel like the bread making process isn’t as rigid as I previously perceived it to be.

The book had some photographs throughout.

This book is an absolute gem for anyone who loves baking or even wants to understand bread on a deeper level. The book explores the science, history and techniques of bread in a way that feels both informative and significant.

The early chapters break down the fundamentals and history of bread making. to then more information on loaves, pizza, focaccia, flatbreads, rolls, buns, and sweet and quick breads. Whether you're an experienced baker or getting into making bread for the first time, this book has a lot to offer without making it seem overwhelming.

I haven't tried any of the recipes yet but as I plan do bake bread more often by myself I will definitely try. I'm quite new to baking bread, especially sourdough, but I like the broad variety of bread from around the globe as well as the structure of the book.

The cookbook is exceptionally thorough and walks the reader through not only the important steps of baking bread but also discusses the reasoning behind why we do it. There is both history and education coupled with great beginners recipes.

The fundamentals of bread...

I was hoping to learn how to bake bread. I planned to start with a simple focaccia. This book was perfectly timed for my very beginners foray into turning flour and water into....bread. This books provides the knowledge and techniques to be successful when adding flour, water and yeast to get bread. From sourdough, to flatbreads and way more, the reader gets a thorough introduction to bread and bread making. Then a large recipe from around the world rounds out your knowledge base. The editors at Cider Mill Press really are putting out the best cookbooks.

I had high hopes for this book. Unfortunately, I feel there are much better books and even free online bread tutorials. Both the start and ending had to much filler for me. The book was heavy on history and general information. I was looking for more technical information. Some breads had a wealth of extra information while others had a short sentence. The lack of pictures was also a downside for me. The pizza recipes were interesting but strayed to far from the premise of the book.

With over 300 recipes from across the globe, this cookbook offers an incredible variety, from rustic sourdough and buttery brioche to chewy bagels and delicate flatbreads.

One of the standout features is how educational it is. The opening sections—covering history, fermentation, grains, tools, and techniques—are genuinely helpful, especially for beginners like me who want to understand the why behind the how. The inclusion of both weight and volume measurements is a huge plus, as is the attention to detail in each recipe.

That said, I was surprised by the lack of photos, especially given such a beautiful cover. In my opinion, this book might’ve benefited from more photos—especially early on—to help visualize the process and finished products.

If you're serious about learning the art of breadmaking—or want a single go-to reference for everything from focaccia to ancient grain loaves—this book absolutely delivers.

Never guessed I would write that a cookbook has too many recipes, but in this case I actually think it's true. Don't get me wrong, there are excellent recipes here from all over the world, recipes not necessarily famous outside of the said country. However, I think the pizza doughs would have been enough, and the actual pizzas with toppings should be another book. The pizzas look delicious, but they are not what I'm looking for in a book like this.
There are some recipes I really appreciate, like the Neapolitan pizza dough and New York-style bagels, as well as the regional bread, but i really appreciate the how-to-part in the beginning.

This is a complete book of bread and also includes some muffin receipes. It gives a complete guide to flours, seeds and other ingredients that you can add to your dough as well as technical detail on how to get the best out of your dough, The pizzas look devine too. iIt would be a good book to have if you want to get into bread making.

This is an incredible book for beginner and advanced bread makers alike. Beautiful photos. A comprehensive encyclopedia of grains and pulses, fundamentals of bread baking, and explanations of essential equipment. Recipe ingredients list both weight and volume measurements. Easy to follow instructions for beginners. Includes both yeast and sourdough recipes.
