Dustin Harder’s “Epic Vegan Quick and Easy” delivers everything promised up front in the title, and then some. This collection of recipes is rich with a variety of dishes that won’t strain the food budget, nor one’s daily schedule. And while obviously targeted for a specific diet, the recipes are so tasty-looking that even omnivores will be able to easily find several dishes that they’ll be tempted to add into their meal rotation.
