Each chapter is chock-full of tips and tricks that use a wide range of techniques, from braising and roasting to grilling, slow cooking, and sheet-pan cooking, and all fifty recipes focus on tender meat infused with flavor. Keep roasted chicken classic, or give it pizzazz with the addition of a savory compound butter. Get perfectly crispy tenders without frying or give fajitas with lime crema the sheetpan treatment for easy prep (and cleanup). Other favorite recipes include Chicken Thighs with Maple–Cider Vinegar Glaze and Fennel-Apple Slaw, Sheet Pan Shawarma, Chicken Parmesan Meatballs, Green and White Chicken Chili, Peachy Sriracha Sticky Wings, and Pineapple Chicken Salad with Green Beans and Toasted Coconut. Chicken is popular with almost everyone, so Stacie Billis’ timely chicken cookbook, Winner! Winner! Chicken Dinner: 50 Winning Ways to Cook It Up! is worth taking a look at. Billis is an excellent writer and recipe developer, and while looking through the recipes, readers get to know her as a regular person that most can relate to. So, when it’s someone we know, we are more likely to try their recipes.

The recipes for roast chicken are mouthwatering (there are several with unique spices), and there are recipes for sauces and marinades, as well as sheet pan dinners and quick chicken dinners. Billis includes more than one recipe for fried chicken, including one with Indian spices. There are some yummy salads, wings, pizza, burgers, and pot pie. There is something for everyone here. And one thing that is very important to most cooks, and one of the most important features of a good cookbook, there are beautiful photographs of most of the recipes. Because almost everyone loves chicken, this cookbook will keep cooks busy for several months, and several of the recipes are sure to become family favorites.

While this is mainly a book of fabulous chicken recipes, it goes a bit further and covers important information on choosing the right cut of chicken, the different kinds of chicken (organic, antibiotic-free), and safe handling of chicken and safe temperatures to eat it. There are also helps on cutting up chicken, as well as carving. Next is information on brining, baking, roasting, etc. Very helpful.

This cookbook is highly recommended. The recipes are for dishes that real people will actually want to prepare and eat.
